Lemon-Poppy Seed Muffin Recipe

Ingredients
- All purpose flour : 1 3/4 cup
- Sugar : 3/4 cup
- Baking powder : 3 1/2 tsp
- Salt : 1/2 tsp
- Grated lemon rind : 1 tbsp
- Poppy seeds : 1 tbsp
- Buttermilk : 1 1/4 cup
- Butter / melted : 2 tbsp
- Large egg : 1
Instructions
- Preheat oven to 400 F .
- Place 16 paper muffins cup liners in muffin cups ,coated with cooking spray. set aside .
- In a medium bowl ,combine together flour and next 3 dry ingredient (sugar, baking powder and salt) and stirring well with whisk .
- Add lemon rind and poppy seed and mix it together .
- In the mixer bowl combine buttermilk, butter melted and egg , mix it well .
- After that add your flour mixture to your buttermilk mixture and stirring just until moist .
- Spoon batter into your muffin cups , filling three – fourths full . bake at 400 F ( preheated oven ) for 20 minutes or until golden brown .
- Cool 10 minutes in pan on wire racks . Remove muffins from pan , cool completely on wire racks .
