I was looking on internet to find a healthy snack for my best friend and I found oatmeal cranberry walnut cookie that comes from best summer weekends cookbook. These cookies are perfectly acceptable for breakfast or snack for your love one, made with ingredients like walnut or pecan, high fiber cereal and dried cranberries or you can also use raisin too.

They have been healthfied so you can feel good enjoying them any way for breakfast or snacks.

Ingredient for oatmeal cranberry walnut cookie

Unsalted butter, at room temperature: 3/4 Cup ( 170 grams)

Light brown sugar, firmly packed: 1 Cup (200 grams)

Large egg, at room temperature: 1

Honey (optional): 1 tablespoon

Pure vanilla extract :1 tsp (4 grams)

All purpose flour: 3/4 cup (95 grams)

Baking soda: 1/2 teaspoon

Salt: 1/2 teaspoon

Ground cinnamon: 1/2 teaspoon

Old fashioned rolled oats: 3 cups( 260 grams)

Walnut or pecans, coarsely chopped: 1 cups(120 grams)

Raisins, dried cranberries or cherries: 1/2 cup (75 grams)

instruction 

Oatmeal Cranberry Walnut Cookies: Preheat oven to 350 degrees F (180 degrees C ) and lightly grease two baking sheets or line them with parchment paper.  

In a medium bowl, whisk together the flour, baking soda, ground cinnamon and salt, set aside.

In the  bowl of your electric mixer with the paddle attachment, beat butter until smooth and fluffy. Add the  sugar and beat until creamy and smooth about 1 minute.

Now at this step, add the egg, honey and vanilla extract and beat to combine.

After that, add flour mixture to the creamed mixture and beat until incorporated.

Then stir in the rolled oats, walnut and raisins.

At the end, using an ice cream scoop, place small heaps of the batter and space the cookies about 2 inches apart on the baking sheet. Then lightly wet your hand and flatten the cookies slightly with your fingers so they are about 1 inch thick.

Bake the cookies in preheated oven for about 15 minutes or until golden brown around the edges but still soft. Remove from oven and let it cold in baking sheet for afew minutes and after that transfer them to wire rack and let them fully cold.
