Ingredients
  • Coconut powder: 300 gram
  • White eggs: 300 gram
  • Sugar: 600 gram
  • Lemon juice: 1 tbsp
  • Rice flour: 25 gram
  • Vanilla extract: 1 /2 tsp
Instructions
  1. First combine coconut powder and sugar in a pot and add half of the white eggs and mix it well, blend mixture in a food processor after that add the rest of the white egg and mix it well .
  2. At this stage, we pour another pot with water and place it on the stove .
  3. When the water start to boil, place the pot with the mixture on the top of the boiling water and mix it gently for 10 minutes or until when you touch your mixture with finger you feel, it is warm not too much hot .
  4. Tip: make sure button of the top pot doesn’t touch with boiling water and all the time you should mix it slowly until sugar dissolve completely and your mixture become warm.
  5. Now leave it at the room temperature for at list 6 or 7 hours to cool down in the room temperature ( don’t leave it in fridge)
  6. In this step, add lemon juice, vanilla and rice flour and mix it well.
  7. Preheated oven at 400 F and place parchment paper in your cookie pan.
  8. Fill your piping bag with the batter, you don’t need tip for this cookie and make sure when you place cookie in pan leave 1 inch space between each cookie.
  9. Place your cookie pan into preheated oven and set up the temperature again at 360 F for 15 minutes or until your cookies start to become gold.
